Matcha Financiers

Matcha lattes have been becoming increasingly popular over the past few years and have sparked new creative ways of incorporating matcha into baking. One of my favorite ways to use matcha is in a matcha financier. Financiers are similar to madeleines but less cakey and more moist, and they are perfect with a cup of tea, or just served on their own!
My matcha financier recipe originated from my family, who got a financier recipe from a friend and perfectly adjusted it to our taste. The recipe is naturally gluten-free, not too sweet, and very simple. If you’re a matcha lover like me, you will love this almond flour matcha financier recipe.

Equipment:
Electric hand mixer
Madeleine / financier baking pan
Ingredients
1 tbsp. matcha powder
5/6 cup almond flour
2 tbsp. corn or potato starch
3/4 stick butter
1/3 cup sugar
1 ½ tsp honey
3 egg whites
Recipe
1. Preheat oven to 350 degrees
2. Beat egg whites with hand mixer for 1-2 minutes or until foamy (it should be about 3x larger in volume)

3. Melt butter (butter can splatter in the microwave so be sure to lower the power to half and check on it every 10-20 seconds)
4. Add all other ingredients into bowl with the egg whites
The matcha powder lends the finished financiers a beautiful green color and flavor!
5 .Mix together until everything is well-incorporated
6. Grease financier baking pan (I do this by adding oil in the pan and spreading it around with a paper towel. Be sure to get all the corners!)
7. Pour batter into pan until each mold is about 1 inch thick (this can definitely be modified with preference, but the baking time may change)
Be careful not to overfill the financier pans
8. Bake in oven for about 14 minutes, or until the edges are a golden brown
9. Let cool for a few minutes and enjoy!
The financiers are also great dusted with powdered sugar or served with a light glaze
