Simple Quiche Recipe

Hey all! Quarantining sucks, so here’s a recipe for quiche that’s relatively simple and not hard to make. You can, of course, substitute any of the fillings I used with your own, and I definitely encourage you to try out new combinations and put your own spin on the recipe!


Ingredients

1 pie crust

4 eggs (use more if you have a bigger tin!)

1.5 cups of milk (half cup of milk for every full egg)

½ cup of heavy cream or half-half (replace milk with cream or half-n-half for a richer custard!)

.10 oz of mushrooms

.60 oz of shishito peppers

2 cups of cheese

  1. Get a pie crust and pre-bake it in the oven. You could make your own dough, but I didn’t! You’ll want to put some parchment paper over the crust and weight it down with nuts or dried beans or  pie weights, and bake it in the oven at 350℉ for about 15 minutes, or until the crust is lightly browned. Then remove it from the oven (be careful not to break the edge of the crust, like I did) and let it sit, and turn the oven up to 400℉.

  2. You’ll want to take your veggies—I used shishito peppers and mushrooms—and sauté them in a pan with some seasoning for around fifteen minutes. Once the veggies begin to sweat, pat them dry and spread them evenly in the middle of the pie crust. You are welcome to substitute your own veggies or meats, but make sure to cook them first. 

  3. In a bowl, beat four eggs together. For every egg you use, add a half cup of milk. If you want, you can substitute one cup of milk with a cup of cream or half-n-half. Once you’ve mixed the eggs and milk together, pour into your pie crust.

  4. Sprinkle generously with as much cheese as you want. I used ghost pepper cheese from Hyde Park Produce, along with some leftover cotija. 

  5. Place in the oven and bake for 45-50 minutes, or until golden brown all around and puffy. Once the timer goes off, carefully take the quiche out and let it cool for at least 20 minutes, or till the top goes down. 

  6. Slice and serve with salsa verde, hot sauce, or whatever else you desire!
